Sesame-Oatmeal Chocolate-Chip
Cookies
½ cup brown sugar
¼ cup white sugar
½ cup soft butter
1 egg
1 tsp. vanilla
½ tsp. sesame oil (optional)
Mix above ingredients in a medium
bowl until creamy. Add:
½ cup wheat flour
¼ cup white flour
½ tsp. cinnamon
½ tsp. soda
¼ tsp. salt
Mix until creamy and add:
1 cup quick or old-fashioned oats
½ cup sesame, white or brown
½ cup semi-sweet chocolate chips
3/4 cup pecans, chopped or whole
(optional)
Mix until it holds together. Drop walnut-sized balls on cookie sheets
about 2” apart and bake at 350 degrees for about 12 minutes, until bottoms are
well-browned and the tops are well-done; the more browned they are, the more
the sesame flavor comes out. Makes 30-36
cookies.
Tip:
For light, crisp, sugary cookies, go a little heavy on the sugar, light
on flour and oatmeal, and use the smallest egg in your large egg carton, or a
medium egg.
I use all wheat flour now, and Vita-mix ground at that.
